3. Palm oil is rich in carotene (0.05%~0.20%), which is dark orange-red. This pigment cannot be effectively removed through alkali refining. The oil color can be stripped to a light color through oxidation. yellow.
4. Palm oil is rich in provitamin A (500~700ppm) and vitamin E (500~800ppm).
5. The presence of palm oil cannot be determined by color reaction. Palm oil mixed with hydrogenated oil is difficult to detect using simple methods. Palm oil or hydrogenated palm oil emits a slightly violet-like odor after being moderately oxidized. If this smell is smelled during stability testing or accelerated oxidation tests, it is a stereotype that palm oil exists.
6. Fractionate palm oil to separate the solid fat from the liquid. The solid fat can be used to replace expensive cocoa butter to make chocolate; the liquid oil can be used as salad, cooking or frying oil. It has a light and refreshing taste.
