The characteristics of palm kernel oil are as follows:
Fresh palm kernel oil is milky white or slightly yellow, with a solid consistency and a lovely walnut aroma. . Palm kernel oil is prone to oxidation and decomposition during storage, and its taste becomes pungent.
Palm kernel oil contains a large amount of lower fatty acids, so its properties are very different from palm oil, but very similar to coconut oil. When used, the two are almost interchangeable.
Palm kernel oil contains slightly more unsaturated acids than coconut oil, so its iodine value is higher. Fresh palm kernel oil is edible. Palm kernel oil can also be separated into solid and liquid through crystallization and pressing. The solid fat can be used as a cocoa butter substitute, and the liquid oil can be used in baked goods, hydrogenation or soap making.
Palm kernel oil has no special color reaction. If mixed with cocoa butter or other oils, it can only be identified based on the refractive index and saponification value.
